25 hometown living at its best T By CINDY KAHLER THOMAS The Wichita County Sheriff’s Deputy Citizens Academy interactively connects the community with its Sheriff’s Deputies from every department. Twice a year the general public is afforded an opportunity to get a very close look into the life of a Wichita County Sheriff’s Deputy. The program, called The Citizen’s Academy, is a fun and engaging way to learn about the department as a whole, and what our deputies do on a daily basis. Academy students tour public facilities, ride along with officers on duty, and partake in other training activities like shooting on a range with some of the weapons used by the Sheriff’s Deputies. Sheriff’s Deputy Melvin Joyner, the coordinator and one of the teachers of the class said there is one Academy in the spring and one in the fall. “It is a 14-week course taught on Thursdays from six to nine in the evenings,” he said. “We let people know what we do, how we do it, and why we do it. There is a lot of interaction they can participate in if they want to.” a mile in their SHOES

26 wichita falls living | hometownmedia.group One of the most public, and eye-opening, interactions are during the ride-along while Deputies make traffic stops and attend accident scenes. Joyner said if the situation is dangerous or fatal the student stays in the vehicle. “They may be sitting in the car, but they see what is going on. Then they ask the deputies how they handle these situations. We rely on our training, and we don’t focus. We go on and do our job, and then we go home and forget about it; because if we dwell on it, we won’t be able to do our job,” he said somberly. Equally as impactful, students go to the shooting range and fire some of the weapons used by Sheriff’s Deputies. The deputies are right there to ensure that everything is done by the book. Deputy Joyner said this hands-on experience can cause a change of heart in even the most fire-arm adverse. He recounts one student in particular who was deathly afraid of guns. “When we went to the range we told her that she could sit and watch. Eventually, she decided to try so that her son would not give her a hard time,” he said. It wasn’t much longer before she told him, “We need more ammo!” They also participate in exercises that display the most difficult aspects of firearms and the community. At the Sheriff’s Office warehouse, they stage an operation called “Shoot, Don’t Shoot” where actors play out various scenarios as a “bad guy.” The students play the deputy role—fully dressed

28 wichita falls living | hometownmedia.group in padded suits and given body shields and firearms loaded with soap pellets. The trainees have a split second to decide whether or not to shoot. Sometimes that is all the deputies have—a split second—to make that same decision. Some of the “bad guys” shoot back, and some surrender. Deputy Joyner said it stings to be shot by one but does no harm. He said as students go through the scenarios they often shout out that they could never do this job. “Every time it is very tense for anyone going through it,” he said. To continue the well-rounded education, detectives also teach at the Academy. The detectives investigate everything from thefts to murders. Deputy Joyner said, “The detectives walk through what it takes to investigate a crime from start to finish.” There is also an arson investigation unit. He said, “Any time there is a fire of suspicious nature, they go out and try to determine how it was started.” The scope of Academy training is not limited to the public’s safety, and thus tours of the jail and Alred prison are also a component. “We give them a tour of the jail and show them the inner workings of it,” Deputy Joyner explained. “One of the Sheriff’s Office units is a cell extraction team that acts if there is a large fight, or if someone calls in about a disturbance that could grow into a fight.” The students are never in those areas but are still able to learn first-hand another one of the many units the Deputies serve in. Deputy Joyner said, “It is a real eye-opener because most people will never see the inside of these facilities.” A Sheriff Deputies training wouldn’t be complete with only field training. As such, a tour of the courthouse, and the TOP: Students can get into the armored vehicle that is used by the SWAT Team if they are part of the Citizen’s Academy class taught by Sheriff’s Deputies. 29 hometown living at its best Sheriff’s Deputies’ offices is included. They get to hear the history and the way things are done now. Deputy Joyner said another important unit in training is the Civil Division. “It is one of the more unpleasant things that we have to do, but it is our job,” he said. Some of those duties include removing children from unsafe environments, taking possession of cars, and even evicting people from their homes. For many who complete the Academy, participation has just begun. Over 200 of the participants go on to join the Citizen’s Academy Alumni Association, a 501c-3 intended to support the Sheriff’s Deputies. The Alumni support the department with many projects to honor the community heroes. The organization purchased shotguns so the department could perform 21-gun salutes, and raised over $400,000 to create the Wichita County Memorial Plaza. The plaza displays two six-foot sculptures created to honor fallen servicemen and women. One of a Sheriff's Deputy, and one of a volunteer Firefighter. On either side, they have the Sheriff’s Deputy's prayer, the firefighter’s prayer, and all the names of those who perished in the line of duty. Located at the Wichita County Sheriff’s Office, it is stunning and has a poignant presence. While the citizen’s academy is just a birds-eye-view of a Deputy’s wide range of responsibilities, the experience is a foundational bridge between our community and its servicemen. The course is free of charge, and you must be able to pass a background check to participate. 35 hometown living at its best B Brandy Belk is making Wichita Falls proud after being voted 4th in nationwide chef’s contest. Brandy Belk always wanted to be a chef. She’s worked at this dream by cooking for others almost her entire adult life. “I have been the head chef at Midwestern State University. I was corporate chef at Work Services Corporation. I was an in-home chef for four years, and now I own my own restaurant,” she said. Belk opened Suga B’s in October of 2022 and has continued to refine her craft. She recently won 4th in a nationwide contest, Favorite Chef by Carla Hall—a celebrity chef. In this competition, chefs from all over the country compete for the top prize of $25,000 and a two-page spread in Home and Garden Magazine. Brandy had to upload photos of her entrees, baked goods, her BROWNIE CHEESECAKE, JUST ONE OF BRANDY'S INVENTIVE DESERTS

36 wichita falls living | hometownmedia.group restaurant, and photos of herself. Once she was accepted, people could vote online for her as their “Favorite Chef.” She was wildly popular. Voters could vote for free once a day, however, Favorite Chef is also a fundraiser for the James Beard Foundation. For a dollar donation per vote, people could vote as many times as they like. The foundation helps up-and-coming chefs to go to school, and open restaurants, and create opportunities. Out of thousands of chefs, Belk was recognized as the 4th Favorite Chef in the nation. She was disappointed not to have taken the first-place spot, but still feels honored and plans to enter next year. Belk continues to elevate her skill at Suga B’s and uses the platform to serve her community. She has done remarkable things since it opened. On Thanksgiving, she prepares a feast and invites friends, family, and anyone without a place to come and eat, free of charge. “We made a post on Facebook that said if anyone needs a place to come to for Thanksgiving we BRANDY, CHEF & OWNER OF SUGA B’S RESTAURANT, SAYS THAT EVERYONE HAS A GIFT FROM GOD AND COOKING IS HERS.

37 hometown living at its best would be glad to feed them,” she said. “So we met about 25 different people that we didn’t even know.” Belk’s location [the Wichita Falls Regional Airport] also contributes to her connection with those in the community. “Having this restaurant has enabled me to cook for people that I wouldn’t have otherwise reached. Military members fly out and people fly in. Often, they stop and get something to eat and we talk. We are building relationships. Suga B’s also gives me a bigger space and bigger opportunities. I have catered for the Forum, engagement parties, birthday parties, and wedding anniversaries for two people to 200 people,” she said gratefully. She prepares breakfast items, fantastic burgers, and sandwiches, with hand-cut fries, house-made chips or sweet potato fries. She has daily specials of things that aren’t on the menu, and she describes her pastry cabinet as “dessert heaven.” Her hours are 8:00 a.m. to 4:00 p.m. on weekdays. † BRANDY IS AN EXCELLENT CHEF, ACCORDING TO HER HAPPY CUSTOMERS. TEXOMA’S omen W Influence of IIn honor of National Business Women’s Week, the third full week in October, all of us at Wichita Falls Living Magazine wanted to highlight a few of the many women at the heart of not just their workplace, but in our community. These ladies have shared tips on combating issues that we can all relate to and offer a fresh perspective on balance and growth. Check out their Q&A’s to hear their thoughts on being a WOMAN IN BUSINESS and celebrate their accomplishments—not only professionally, but how they did it while juggling marriage, motherhood, community involvement and more. Striving for balance in life is something we all strive for. So join us in commending this year’s Texoma’s Women of Influence for continuing toward this goal. We hope their experience, workethic and wisdom encourages you in your own path.

CAREER OVERVIEW: In the 1970’s Katherine became one of the first female television reporters in Texas at KPRC-TV in Houston, and later went on to report for KOOL-TV in Phoenix, where she won a Rocky Mountain Emmy Award. In 1979, Katherine and her husband purchased horseback riding stables in Estes Park, Colorado, and Tucson, Arizona where they guided rides in Rocky Mountain National Park and the Pusch Ridge Wilderness in Arizona. In the late 80’s Katherine and her sons returned to Wichita Falls to work in the family-owned garden center. Eventually, Katherine and her two brothers inherited Smith’s Gardentown, which she purchased fully three years ago. She now operates the nursery with the help of her son, Michael Fiore, and a number of long-time, loyal employees. In recent years, Smith’s Gardentown has expanded to include a Wild Birds Unlimited franchise; a rock, sand, and gravel business; and Smith’s Cart-Away Concrete. PERSONAL PROFILE: Katherine’s main pastime has always been reading. She loves to travel and often uses her love of horseback riding to explore a new area. She is also an avid birder. In 2007, Katherine climbed the Inca Trail to Machu Picchu with her oldest son. Now that she has 7 grandchildren, she also tries to spend as much time as possible with them (some of them even enjoy watching birds). Katherine has served on the boards of several local nonprofits, including Girl Scouts, Better Business Bureau, Child Advocates of Red River, Wichita Falls Symphony League, and Wild Bird Rescue. She was a CASA volunteer for almost 20 years. BALANCING RESPONSIBILITIES: Katherine comes from a line of hard-working people who had never heard the phrase ‘work/life balance’. They just worked till the job was done, then came home and took care of everything else. She was a single mother, working very long hours. Fortunately, her mother was available to help take her boys to athletic practices, and they ate many meals at Grammy and Grandad’s house when the boys were in school. FAVORITE THING ABOUT BEING A WOMAN IN BUSINESS: “When I applied for my first job in radio in Houston, I was told that they would not consider a ‘girl’ for that position.
